Hearth & Crumb
Three round sourdough loaves cooling on a floured wooden bench in low morning light

Asheville, North Carolina

Bread worth waking up for, baked before the city stirs.

A small neighbourhood bakery on Haywood Road — sourdough, croissants and seasonal pastries out of the oven each morning.

Open Wednesday to Sunday, 7am to 2pm — pull up a chair.

Good to know

Questions we get most mornings.

Anything else, call or email — a person here will answer.

Can I order ahead?
Cakes and wholesale bread, yes — call or email with your date and what you're after, and we'll plan it with you. Bread and pastries are walk-in, so come by in the morning and see what's out.
When's the best time to come in?
Wednesday to Sunday, 7am to 2pm. Everything is baked in the morning, so earlier is better if there's something particular you've got your eye on — the case thins out as the day goes on.
Can I sit in?
There's a handful of tables, and that's it — the shop is small on purpose. Sit down with a pastry and a coffee, or take it away.
  • Sourdough
  • Butter croissants
  • Seasonal pastries
  • Custom cakes
  • Wholesale bread

Out of the oven every morning.

The case changes with the season, so it looks different every week. These three are always there.

  • A sourdough loaf cut in half on a linen cloth, showing an open crumb

    Naturally leavened sourdough

Given time rather than a shortcut: a crackly crust, a chewy open crumb, and still good the day after.

  • A croissant torn open to show its flaky, buttery layers

    Croissants

Buttery layers baked until the edges shatter. Best eaten standing up, still warm from the tray.

  • A rustic fruit galette on a ceramic plate beside a linen napkin

    Seasonal pastries

Fruit, spice, something with cream — whatever the season is doing, folded into a pastry and baked off early.
